Holiday pay on variable earnings, the National Minimum Wage position including any accommodation offset, right-to-work checks, and the pension auto-enrolment assessment for short-term staff. That last one catches people out because eligibility is assessed each pay period rather than once. It is all routine when it is set up properly and expensive when it is not.

I run a consultancy here. Does being in Scotland change how I pay myself?

Yes, and more than people expect. Scottish income tax applies to your salary but not to your dividends, which are on UK rates wherever you live. Above roughly £33,500 of earnings a Scottish taxpayer pays more than an English one, and between £43,663 and £50,270 the marginal rate on salary reaches 50% once National Insurance is counted. That makes the split worth working properly rather than copying.
